Transfer to a bowl and top with chopped scallions, almonds, lemon juice, olive oil and crumbled feta. Make a beetwich! Toast two slices of rustic bread. Place goat cheese, arugula and cooked beets on top of one of the slices of bread. Drizzle with olive oil and balsamic vinegar. Cover with the other slice of bread. Serve them with a creamy horseradish sauce in a tasty side dish. Roast (instructions above) with a clove of garlic, onions and fresh herbs like rosemary or thyme for a delicious infusion of flavors.
