Season ribs with salt and pepper. Place ribs on medium hot grill over indirect heat; cover grill.
Turn ribs once or twice, during grilling time of 1-1/2 to 2 hours. Baste with sauce during last 20 minutes of cooking time.
For extra tender ribs, remove ribs from grill when done, wrap in foil and place foil wrapped ribs in paper bags and allow to stand for up to an hour. Remove from bags and serve hot.
